Last but not least...sweet and savory

It makes us a little sad to say that this is the Lil' Coasters last Valentine's Day post of this year.  Not to worry, it's a good one!

We wanted to take a quick moment to thank these girls: Gabby, Nevaeh, and Oliva! They worked their tails off in the kitchen, in hopes that you'll think outside the box this Valentine's Day...well and to maybe get their picture on the back of one of our trucks.  HA!  Keep liking, sharing and tagging and make it a reality! #lilcoasters #kidsinthekitchen

Cupid's Arrow Tomatoes

INGREDIENTS:

  • Grape tomatoes
  • Pepper Jack cheese cubes
  • Toothpicks

PREPARATION:

For the first recipe, we are keeping it really simple...our favorite!  We cut grape tomatoes at an angle, put them together and made a heart.  To finish it off, we put a cube of pepper jack cheese (courtesy of Monterey Bay Caterers) on the end and there you have it!

Chocolate dipped mandarin oranges

INGREDIENTS:

  • Mandarin oranges (a.k.a. Cuties)
  • Chocolate chips
  • Sprinkles (optional)
  • Parchment paper
  • Cookie sheets

REPARATION:

This was a fun one because you get a little chocolaty and get to lick your fingers at the end.

First, peel the mandarin oranges and separate them into individual wedges.  Then place the parchment paper on your cookie sheets.  Now you're ready to melt the chocolate.  We did it at 30 second intervals in the microwave, stirring in between, until smooth.

Now it's time to dip the orange wedges in the chocolate and decorate with sprinkles!  You can get as creative as you want here.  Once all the wedges get dipped and decorated, place the cookie sheets in the refrigerator, about 30-45 minutes until the chocolate is hard.  They're ready to serve at this point.  If you're not serving them until later, keep them in the refrigerator.

If you want them to be served as individual slices, try putting them in mini muffin liners.  We transferred them onto a plate and served them to the employees and they LOVED them!
