Veggie Flowers with Yogurt Dip

You can't have Easter without flowers.  What's even better, is these flowers are edible and healthy!  These Lil' Coaster girls loved cutting their cucumbers and carrots and dipping them in yogurt ranch dressing.

What you'll need:

  • 2 cucumbers
  • 4 carrots (the bigger ones)
  • 1 packet of ranch dressing powder
  • 8 ounces of plain greek yogurt
  • 1/3 cup of reduced fat milk
  • Long toothpicks

First, we cut the cucumbers and carrots into coins (we did it for the girls, since we used a sharp knife).  We then cut the cucumbers in half.  Our bunny helpers were eager to cut the center out of the cucumber and cut the carrots into tulips.

Once everything is cut, you assemble the flower by simply putting the toothpick through the skin of the cucumber and then through the center of the carrot and viola!  You've got a flower!

While Olivia finished assembling our tulips, Gabby and Nevaeh helped make the yogurt ranch dressing.  Add the yogurt, milk and ranch in a bowl and stir.  

Then dip your edible bouquet!  DELISH!
